Cheap and GREAT!

Can you imagine feeding yourself, or your family for $2.22?  No, really, I mean it!  I bought a bag of Soup Beans for $2.22 and I am still eating them!  Yes, you have to cook them on the stove for a couple of hours, but what a great Sunday meal!  I know what you are thinking, but blame it on the dog, if you must!  Beans are a great source of fiber and protein.  They are cheap, easy, and filling!
If you don't want to eat them as soup beans, for days on end, simply rinse and add them to salads.  My favorite, is a bowl drained, topped with diced onion, and hot sauce.  No, I don't have a dog to blame, but hey, gas is part of being alive. (If you haven't figured that one out already!)  There are a few ways to help reduce the amount of gas in beans: soak the beans, making sure to change the water a few times, and cook slowly.  Changing the water, while soaking, keeps the gas causing sugar, oligosaccharide, from leaching back in to the beans.
So, did my entire meal really only cost $2.22?  Well, when you figure in the fresh baked, 5 Fiber slice of bread from Great Harvest Bread Co., and the free vegetables from my grandmother's garden - it is pretty darn close!  Enjoy!
